Hello. My name is Kelley and this is my father Dennis. I know this website is not about beach wheelchairs* or anything remotely related, but this is one of my favorite pictures of us. :)
I have had Muscular Dystrophy since birth. I am 35 years old (as of the creation of this website in 2012). For most of my life, I was able to eat anything that I wanted. Approximately five years ago, I started to notice food was becoming harder to swallow and I had some scary choking incidents. Over time, I have had to cut out more and more things from my diet. As the list of possibilities dwindled, my father and I began exploring recipes.
If you have trouble chewing or swallowing, but have the physical ability to still cook/make these recipes for yourself, great! However, if you have a physical disability that prevents you from cooking, as I do, I have a special message for you. As disabled people, sometimes we go out of our way to try to be less "burdensome." I have amazing family and friends, and I know they don't consider what they do for me as a burden. However, I think it is only natural for us to want to "lighten the load" in any way we can. For that reason, you might be worried about asking someone to make this food for you. Please don't let that be a barrier. Remember that they love you and they want to make your life easier. They don't want you to endure the labor of having to chew every bite a million times or the trauma of choking. Of course these recipes are not for everyone and I can certainly understand if someone has reached a point where a feeding tube is most appropriate. But please don't eat baby food-esque mush if there might be another way.
